Pure iodized chalk with colluvial limestone chalk formations. Viticulture: Organic (Ecocert, 2022), biodynamic methods (since 2021). Vinification: From a selection of the best grapes from Chtillon de Haut, ambient yeast primary fermentation and full malolactic conversion, aged for 10 months in 300 and 600 L barrels, bottled and aged for another 42 months on lattes under natural cork, no
