Flank steak is one of those cuts that rewards you for keeping it simple: a good marinade, high heat, and a sharp knife are all you need. Slice it thin against the grain for tacos, stir fry, fajitas, or serve it on its own with chimichurri. It also cooks beautifully on the grill or a hot cast iron.
